Plantain soup

Ingredients:
2 largeGreen plantains, peeled
Oil for deep frying
6 cupStock
Salt & pepper
Fresh lime juice
Procedures:
1Slice plantains paper thin & place in a large bowl.
2Cover with water & soak for 30 minutes.
3Drain slices, pat dry with paper towels.
4Heat oil in skillet & fry plantain slices till they are golden brown.
5Drain.
6Crush plantains in a mortar & pestle until you have a thick paste.
7In a large pot, heat stock & gradually stir in crushed plantain.
8Season well.
9Simmer over low heat, stirring frequently.
10For 20 to 25 minutes.
11Serve sprinkled with lime juice.
