| | Thinly sliced onion | | 1
| | Minced clove garlic | | 1
| tbsp | Grated fresh ginger OR 1 | | | -teaspoon dry ginger | | 2
| tbsp | Soy sauce | | 1/4
| cup | Dry sherry | | 2
| tbsp | Wine vinegar | | 1
| tbsp | Cornstarch | | 3
| cup | Melon cubed - honeydew or | | | -cantaloupe | | 1/2
| cup | Pickled watermelon rind | | | -diced |

Procedures:
| 1 | Heat oil in large skillet over medium high heat. | | 2 | Brown pork cubes, stirring until lightly browned, about 4 to 5 minutes. | | 3 | Stir in onion, garlic and ginger; stir and cook for 2-3 minutes. | | 4 | Mix together soy sauce, sherry, vinegar and cornstarch. | | 5 | Add to skillet. | | 6 | Cook and stir until sauce thickens. | | 7 | Stir in melon and watermelon rind. | | 8 | Heat through. |
