| tbsp | Plum sauce | | 2
| tbsp | Bean sauce | | 2
| tbsp | Hoisin sauce | | 1
| tbsp | Sherry | | 1/4
| cup | Dark soy sauce | | 1/4
| cup | Maple syrup |

Procedures:
| 1 | Wash and clean game hens. | | 2 | Pat dry and rub cavities with the five spice powder. | | 3 | Mix hoisin sauce, bean sauce, sherry and plum sauce. | | 4 | Rub remaining sauce mixture plus salt. | | 5 | Let stand over- night. | | 6 | Mix soy sauce and syrup. | | 7 | Preheat oven at 350 degrees. | | 8 | Rub skin of game hens with soy sauce and syrup mixture. | | 9 | Roast back side up for 20-25 minutes. | | 10 | Turn breast side up and roast for another 20-25 minutes until skins turn golden brown |
