| tsp | Cornstarch | | 2

| lbs | French-fried blanched | | | -almonds | | | Plus extra almonds for | | | -topping |

Procedures:
| 1 | Cut chicken in ?inch cubes. | | 2 | Brown quickly in hot oil in a large skillet. | | 3 | Add next 5 ingredients, cover, and cook about 7 minutes. | | 4 | Scatter sugar peas on top, cover, and cook 5 minutes. | | 5 | Add soy sauce. | | 6 | Mix cornstarch and water; add to skillet and cook, stirring, just until mixture is slightly thickened and glazed. | | 7 | Sprinkle with almonds and serve. | | 8 | Pass soy sauce and extra almonds. | | 9 | Serve with molded rice, and fresh orange slices. |
