Ingredients:
1 cupLong-grain rice, cook, no salt
1 cupCooked ham, bite-sized
Salad oil
1 medCelery rib, chop fine
1 smallOnion, chop fine
6 ozFontina cheese, shredded
1/3 cupFrozen peas, thawed
2 tbspParmesan
1 tbspParsley, chopped
1/2 tspSalt
1/2 tspPepper
1/2 cupDried bread crumbs
1 largeEgg
14 ozJar diavolo or marinara

Procedures:
1In processor blend ham until ground.
2In 2tb hot oil, coook celery and onion until very tender.
3Remove skillet from heat; stir in cooked rice, ham, fontinia, peas, parmesan, parsley, salt and pepper.
4Divide rice mixture into 12 equal portions.
5With hands, shape into a ball.
6On waxed paper, place bread crumbs.
7In pie plate, beat egg.
8Dip balls in egg, then into crumbs to coat.
9Wipe skillet clean.
10In same skillet in ?c hot oil, cook balls, turning frequently, until evenly browned and heated through, about 15 minutes.
11To serve, heat sauce until hot.
