Ingredients:
1 packFor 10-inch two-crust pie
1 cupSugar
1/2 cupAll-purpose flour
1/4 tspGround cinnamon
8 cupSliced fresh peaches (8 to 1
-Medium)*
1 tspLemon juice
2 tbspMargarine or butter
Procedures:
1*substitute: frozen sliced peaches, partly thawed and drained.
2make this southern favorite at summer"s peak with juicy, ripe peaches.
3Heat oven to 425 degrees.
4Prepare pastry.
5Mix sugar, flour and cinnamon in large bowl.
6Stir in peaches and lemon juice.
7Turn into pastry-lined pie plate.
8Dot with margarine.
9Cover with top crust that has slits cut in it; seal and flute.
10Cover edge with 2- to 3-inch strip of aluminum foil to prevent excessive browning.
11Remove foil during last 15 minutes of baking.bake about 45 minutes or until crust is brown and juice begins to bubble through slits in crust.
12Serve with ice cream and raspberry-curran sauce if desired.
