Ingredients:
2 cupYellow Split Peas
1 Ham Bone (From Smoked Ham)
1 Clove Garlic, Minced
1 largeOnion, Minced
1/2 cupCelery, Minced
2 1/2 quartWater
1 tbspButter
1 tbspFlour
Salt
Black Pepper, Ground
1/2 cupMilk
Procedures:
1Soak the peas overnight.
2Drain.
3Add the ham bone, garlic, onion, celery and water to the peas.
4Cook until the peas are very tender.
5Remove and discard the ham bone.
6Use a blender or food processor to puree the peas with some of the cooking liquid.
7Return the puree to the rest of the soup.
8Melt the butter in a saucepan.
9Add the flour.
10Cook over medium heat for 5 minutes - do not allow it to brown.
11Add salt and pepper to taste.
12Stir in the milk.
13Cook until the roux begins to thicken.
14Stir into the soup.
15Simmer for 10 minutes.
16Serve with buttered toast or croutons.
