Ingredients:

| cup | Bok choy | | 1
| tbsp | Peanut oil | | 6
| cup | Vegetable stock | | | Salt & pepper | | 25
| each | Wontons | | 3
| each | Scallions, thinly sliced | | | -- on the diagonal |

Procedures:
| 1 | In a soup pot, saute the bok choy in the oil for 1 minute. | | 2 | Add the stock & bring to a boil. | | 3 | Lower the heat & simmer till the bok choy is just tender, about 5 minutes. | | 4 | Season. | | 5 | In a separate pot, bring about 2 quarts of water to a boil. | | 6 | Drop the wontons into the boiling water & cook til ltender. | | 7 | Drain & add to the soup. | | 8 | Serve garnished with scallions. | | 9 | "sundays at moosewood restaurant cookbook" |
