Turkey soup with wild rice & dried corn

Ingredients:
2 tbspVegetable oil
1 medOnion, finely chopped
2 Carrots, diced
2 quartTurkey stock
1/2 cupWild rice, uncooked
1/2 cupDried sweet corn
1 tbspLemon juice
3 tbspFresh cilantro, chopped
Procedures:
1In a large pot heat the oil over moderate heat.
2Add the chopped onion and the carrots and saute, stirring, until the onion just begins to turn golden.
3Add the turkey stock, the wild rice, and the dried corn.
4Bring to the simmer, then cook, uncovered, over low heat for 1 ?to 2 hours until the rice and the corn are tender.
5Stir in the lemon juice and the chopped cilantro.
6Serve very hot.
