Ingredients:
3 1/2 cupCooked, drained black
-beans (approx. 1 cup dried)
1/2 cupFinely diced red onion
1 largeTomato, seeded and diced
1 smallGreen pepper, seeded / diced
1 medCucumber, seeded and diced
1/2 cupChopped parsley
1 tbspChopped fresh mint
Procedures:
1Combine beans with rest of ingredients.
2salad dressing
3?cup lemon juice 1 teaspoon cumin ?teaspoon salt, or to taste ?teaspoon pepper ?cup olive oil
4mix lemon juice with cumin, salt and pepper.
5Beat in olive oil.
6Fold into reserved salad.
7Chill several hours to enhance flavor.
