Ingredients:
2 Eggs
1/2 cupApple juice concentrate
1/3 cupButter, melted
1 tbspLemon peel, grated
1 tbspLemon juice
1 tspVanilla
1 cupFlour
1/3 cupPoppy seeds
1 1/2 tspBaking powder
1/2 tspBaking soda
1/8 tspSalt
Procedures:
1Preheat oven to 350.
2Beat eggs in large bowl.
3Blend in juice, butter, lemon peel, lemon juice, and vanilla.
4Combine dry ingredients.
5Gradually add to egg mixture, beating until well blended.
6Pour batter evenly into greased 9" square baking pan.
7Bake 20 minutes, until wooden pick inserted in center comes out clean and edges are golden brown.
8cool on wire rack.
9Serve warm or at room temperature.
