Ingredients:
2 cupCake flour, sifted
1 tspBaking soda
1/3 cupVegetable shorting, softened
1/4 cupGranulated sugar replacement
1 Egg
2 ozBaking chocolate, melted
1/2 tspPeppermint oil
2 tspVanilla extract
1/2 cupUnflavored milk
1/4 cupSkim milk
Procedures:
1Sift flour, baking soda and salt together.
2Cream shortening and sugar replacement unitl light and fluffy.
3Add egg and beat well.
4Add chocolate, peppermint oil and vanilla and blend thoroughly.
5Beat in yogurt.
6Add flour mixture and milk alternately in small amounts.
7Beat well after each addition.
8Pour batter into two well-greased 9-in.
9Pans or one 9" x 13" pan.
10Bake at 350 °F for 30 to 40 minutes or until cake tests done.
