Ingredients:
1 1/2 ozButter
2 tspGarlic, chopped
1 tspThyme
1 tspBasil
1 tspDill
2 tspChicken base
1/2 tspSugar
1 tspPepper, fresh ground
1 eachOnion, small, diced
8 ozTomatoes, crushed
8 ozTomatoes, diced
2 tbspTomato paste
8 ozV-8 juice
4 tbspWhite wine
5 ozFresh spinach, chopped
12 ozHeavy cream
1 eachRoux (whisk 3 oz butter and
3 oz flour in saute pan
Until thickened)
1 cupWater (optional)
1 1/2 lbsBay shrimp, boiled
Procedures:
1Saute together butter, garlic, thyme, basil, dill, chicken base, sugar, pepper and onion until onion becomes translucent.
2Add crushed and diced tomatoes, tomato paste, v-8 juice, white wine, spinach and cream; bring to a simmer.
3Whisk in roux and simmer for 20 more minutes.
4Add water, if desired, and shrimp.
5Serve immediately
