Ingredients:
1 tbspOlive oil
1 cupWht. turnip ? cubes
1 cupOnions, chopped
1 cupCelery, chopped
1 tbspGarlic, chopped
1 lbsNavy beans, dried
2 cupTomatoes, diced
Fresh ground pepper
2 cupZucchini, ? cubes
10 cupChicken stock
1 cupCarrots, ? cubes
1/4 cupBasil leaves, fresh
Procedures:
1Heat the oil in kettle, add onions and garlic.
2Cook briefly and add the tomatoes, zucchini, carrots, turnips, and celery.
3Cook, stirring, for abou 10 minutes.
4Add the beans, pepper, and stock.
5Bring to a boil and simmer f 1 hour and 45 minutes.
6Add the chopped basil.
7Serve with parmesan cheese on the side.
