Ingredients:
1 tbspVegetable oil
1 sliceBacon, cut into? peices
2 lbsLean stewing beefcubed 1 ?/td>
1 largeOnion chopped
2 tbspFlour
2 eachCarrots, sliced
12 smallWhite onions, peeled
1 1/2 cupBeef stock
6 1/2 ozGuiness beer
2 tbspDark brown sugar
2 tbspRed wine vinegar
1 Bouquet garni
Coarse salt
Pepper
Procedures:
1Preheat oven to 350 degrees.
2Heat oil in a heavy casserole which will fit into the oven and go on top of the stove, add the bacon.
3Fry until browned, drain the bacon on paper towels.
4Dry the cubes of beef with paper towels.
5Brown in the bacon drippings, remove the beef.
6Add the chopped onions, brown lightly.
7Stir in the flour, cook for 2-3 min.- do not let the flour burn.
8Return the beef, along with its juices to the casserole.
9Add the bacon, carrots, white onions, stock, guiness, sugar, vinegar, bouquet, salt & pepper.
10Bring to a boil.
11Cover.
12Bake 1 ? 2 hours, stirring occasionally.
13Serve warm
