Oatmeal lace cookies

Ingredients:
1 1/2 cupRolled oats
1/2 cupAll-purpose flour
3/4 cupFirmly packed dark brown
-sugar
1/4 tspBaking soda
1/4 tspSalt
3 tbspPlus 1 stick butter
1 largeEgg
1/4 cupHeavy cream
1 tspPure vanilla extract
1/2 cupDried currants, soaked in
2 tbspBrandy (opt)
Procedures:

3heat oven to 350°F.
4In a large bowl, mix together the oats, flour, sugar, baking soda and salt.
5Melt the butter in a small, heavy saucepan over very low heat.
6In a small bowl beat the egg together with the heavy cream and vanilla extract.
7Stir in currants if using.
8Stir in melted butter.
9Stir the liquid ingredients into the oat-flour mixture and combine well.
10Drop by teaspoonfuls onto prepared cookie sheets, leaving at least 3" between each cookie.
11These will thin and spread out.
12bake 5-6 minutes, until lightly browned.
13Remove from oven and cool on cookie sheets for several minutes, until cookies hold their shape.
14With a spatula, carefully remove to a wire rack to cool completely.
15Store in an airtight container.
16Makes about 4 dozen.
