Ingredients:
COOKIES
1 1/2 cupFlour, all purpose
1/2 cupGround almonds
1/2 tspBaking powder
1/4 tsp-Salt
1/2 tspGround cinnamon
3/4 cupButter, unsalted, softened
3/4 cupSugar, white
2 Egg yolks
1 tspVanilla extract
1 tspAlmond extract
FILLING
1/2 cupRaspberry jam
1 tspLemon peel, grated
-?of a medium lemon
TOPPING
1/4 cupSugar, confectioner's
1/2 cupSliced almonds
Procedures:
1Preheat oven to 300°F.
2In medium bowl, combine flour, almonds, baking powder, salt and cinnamon and wire whisk.
3In large bowl with an electric mixer cream butter and sugar.
4Add egg yolks, the vanilla and almonds extracts, and beat at medium heat until light and fluffy.
5Add the flour mixture and blend at low speed until just combined.
6Do not overmix.
7Roll dough into 1 ?inch balls.
8Place 2 inches apart on ungreased baking sheet.
9With index fingers press an indentation in centre of each ball to hold filling.
10Bake 22-24 minutes or just until golden brown on bottom.
11Transfer cookies to cool, flat surface with spatula.
12In a small bowl combine jam and grated lemon peel.
13Place ?teaspoon of filling mixing in centre of each cooled cookie.
14If you wish to add an extra decorative touch, sift confectioner"s sugar over cookies and place sliced almonds in the jam filling.
