Ingredients:
2 3/4 cupAll-purpose flour
1 tspBaking Soda
3/4 cupWhite sugar
1/4 cupDark brown sugar, packed
1 cupSalted butter, softened
1 largeEgg
1/4 cupApricot Nectar
1/2 cupApricot preserves
3/4 cupDried apricots, chopped
Procedures:
1Preheat oven to 300 °F.
2In a medium bowl, combine flour and baking soda.
3Mix well with a wire wisk and set aside.
4In a large bowl, blend sugars with an electric mixer at medium speed.
5Add butter and mix to form a grainy paste.
6Scrape down sides of bowl.
7Then add egg, apricot nectar and apricot preserves; beat at medium speed until smooth.
8Add the flour mixture and apricots, and blend on low just until combined.
9Do not overmix.
10Drop by rounded tablespoonfuls onto ungreased baking sheets, 1 ?inches apart.
11Bake for *22* to 24 minutes, or just unil cookies begin to brown at bottom edges.
