Ingredients:

| tsp | Baking powder | | 1/2
| tsp | Ground cloves | | 2
| tsp | Ground cinnamon | | 1/4
| tsp | Salt | | 1
| cup | Quick oats (not instant) | | 3/4
| cup | Dark brown sugar, packed | | 3/4
| cup | White sugar | | 1
| cup | Salted butter, softened | | 2
| large | Eggs | | 2
| tsp | Pure vanilla extract | | 2
| cup | Grated carrot (2 or 3 | | | - medium carrots | | 1/2
| cup | Crushed Pineapple, drained | | 1
| cup | (4-oz.) chopped walnuts |

Procedures:
| 1 | Preheat to 350°F. | | 2 | in a medium bowl combine flour, soda, baking powder, cloves, cinnamon, salt and oats. | | 3 | Mix well with a wire whish and set aside. | | 4 | in a large bowl with an electric mixer, blend sugars. | | 5 | Add butter and mix to form a grainy paste. | | 6 | Scrape down sides of bowl. | | 7 | add eggs and vanilla, and beat at medium speed until light and fluffy. | | 8 | Add carrots, pineapple and nuts, and blend until combined. | | 9 | Butter will appear lumpy. | | 10 | add flour mixture and blend at low speed until just combined. | | 11 | Do not overmix. | | 12 | drop by rounded teaspoons onto ungreased baking sheets, 1-?inches apart. | | 13 | Bake 13-15 minutes, taking care not to brown cookies. | | 14 | Immediately transfer cookies with a spatual to a cool, flat surface. |
