Ingredients:
1 1/2 cupCoarsely ground, roasted
-almonds
1 cupSugar
Pn Salt
1/4 cupUnsweetened cocoa
Matzo meal
1 Grated rind of orange
1/2 tbspAlmond extract
1 Egg, lightly beaten
1 Egg yolk, lightly beaten
Procedures:
1Preheat oven to 350°F.
2Combine almonds, sugar, salt, cocoa, 1 cup matzo meal, orange rind, almonds extract, egg and egg yolk in a small bowl.
3drop dough by rounded teaspoonfuls on oiled baking sheet dusted with matzo meal.
4Shape each cookie into a oval, flatten with bakc of fork.
5bake for 10 minutes.
6Cool on rack.
7makes 2-?dozen 3" cookies.
