Grilled pork tenderloin

Ingredients:
1 1/2 lbsPork tenderloin, fat and
-sinew removed
1/4 cupDry white wine
1/4 cupOlive oil
2 tbspLemon juice
1 1/2 tbspHoney
1/2 tbspTarragon
Freshly ground black pepper
Procedures:
1Preheat grill.
2Cut pork tenderloin crosswise into 1" medallions.
3Place cut side down and flatten to ? thick with broad side of chef"s knife or rolling pin.
4In medium bowl, whisk together the wine, olive oil, lemon juice, honey, tarragon and pepper.
5Place pork medallions in marinade.
6Turn and marinade at room temperature for 15 minutes or up to two hours in refrigerator.
7When coals are ready, place medallions, cut side down, on grill.
8Cook over medium heat about three minutes, or until juices rise to the surface.
9Turn and grill on other side three or four minutes, or until no longer pink.
10Serve immediately
