Ingredients:
-COOKIE:
1 cupButter-flavored shortening
1/2 cupConfectioner's sugar
2 tbspMilk
1 tspVanilla extract
1/2 tspCinnamon
1 3/4 cupAll-purpose flour
3/4 tspBaking powder
-COATING:
1 cupSugar
1/2 ozSemi-sweet chocolate
-finely grated
1/2 tspCinnamon
Procedures:
1For cookie: combine shortening, sugar, milk, vanilla and cinnamon in large bowl.
2Beat until light and creamy.
3Add flour and baking powder.
4Beat at low speed until blended.
5Shape dough into one and a quarter-inch circles using a pancake turner or spatula.
6For coating: combine sugar, chocolate and cinnamon in shallow bowl.
7Set aside.
8Bake cookies in preheated 300°F oven for 20 to 25 minutes.
9Cool on baking sheet for one minute.
10Place each cookie in coating mixture.
11Coat on both sides.
12Cool on wire racks.
13Yield: approximately 2 dozen cookies.
