Matzo meal cookies

Ingredients:
1/4 cupSweet. shred. dried coconut
1 cupMatzo meal
1/3 cupFirm packed lt brown sugar
1/3 cupMargarine or butter
1 tbspWater
1 tspVanilla
1/4 cupJam
Procedures:
1In a food processor or with a knife, mince coconut.
2In processor or bowl, whirl or rub together coconut, matzo meal, sugar, margarine, water, and vanilla until the crumbly dough sticks together when packed.
3Compact dough into tablespoon-size balls.
4Place 2" apart on 2 ungreased 12x15" baking sheets.
5Flatten balls to make about 1 ? wide.
6Bake in a 325°F.
7Oven until cookies are a rich brown, 25-35 minutes.
8Transfer to racks.
9For jam centers, let cookies cool for about 3 minutes, then press the handle end of a wooden spoon into each cookie, making a depression about ? deep.
10Fill each hollow with jam (?to ?teaspoon; do not overfill); let cool.
11Serve, or store airtight up to 4 days; freeze or store longer.
