Baked stuffed papayas

Ingredients:
1 eachMedium Onion, chopped
1 eachClove garlic, finely chopped
1 lbsGround Beef
1 each16oz. can whole tomato, drain
1 eachJalapeno, finely chopped
1/2 tspSalt
1/4 tspPepper
4 eachPapayas (about 12oz. each)
2 tbspParmesan cheese, grated
Procedures:
1Cook and stir beef, onion, and garlic in 10-inch skillet over medium heat until beef is light brown.
2Drain; stir in tomatoes, jalapeno pepper, salt and pepper.
3Break up tomatoes with fork.
4Heat to boiling.
5Reduce heat; simmer uncovered, until most of the liquid is evaporated, about 10 minutes.
6Cut papayas lengthwise into halves and remove seeds.
7Place aobut 1/3 cup beef mixture in each papaya half.
8Sprinkle with cheese.
9Arrange in shallow roasting pan.
10Pour very hot water into pan to within 1 inch of tops of papaya halves.
11Bake, uncovered, at 350 degrees until papayas are very tender and hot, about 30 minutes.
