Ingredients:

| cup | Flour | | 3/4
| cup | Margarine | | 1
| cup | Shredded zucchini | | 1
| | Egg, beaten | | 1
| tsp | Grated lemon rind or juice | | 1
| tsp | Baking powder | | 3/4
| cup | Sugar |

Procedures:
| 1 | Sift together flour and baking powder. | | 2 | Cream sugar and margarine until fluffy. | | 3 | Add egg, zucchini and lemon rind to creamed mixture. | | 4 | Stir in flour mixture. | | 5 | Drop by teaspoonfuls on greased cookie sheet. | | 6 | Bake in a 350 degree oven for 10 to 12 minutes. | | 7 | Sometimes we add nuts or chocolate chips on top too! randy rigg |
