Lemon shorties

Ingredients:
BASE
1 cupButter, softened
1/2 cupPowdered sugar, sifted
2 cupAll-Purpose Flour
1/3 cupPotato flour
LEMON TOPPING
3 Lemons, peel finely grated
1 cupSugar
3 Eggs
1/2 cupAll-Purpose flour, sifted
3/4 tspBaking powder
3 tbspLemon juice, strained
TO FINISH
Powdered sugar for sprinking
Procedures:
1To make base, beat butter and powdered sugar together in a large bowl until creamy.
2Sift all-purpose flour and potato flour into bowl; mix into butter to form a soft dough.
3Spread evenly in base of an ungreased 13" x 9" baking pan.
4Cover surface with plastic wrap; rub with the back of a spoon to smooth.
5Remove plastic wrap; prick well.
6Chill 30 minutes.
7Meanwhile, preheat oven to 350 degrees (175 c).
8Bake about 15 minutes or until lightly browned.
9Remove from oven and set aside.
10To make topping, put lemon peel, sugar and eggs in a medium-size bowl.
11Beat together until smooth and creamy.
12Sift flour and baking powder into bowl; fold into egg mixture.
13Stir in lemon juice.
14Pour lemon topping over base; return to oven 25 minutes or until very lightly browned.
15Cool in pan.
16When cool, cut in 30 bars.
17Sprinkle powdered sugar evenly over top.
