Ingredients:
| | BASE | | 1
| cup | Butter, softened | | 1/2
| cup | Powdered sugar, sifted | | 2
| cup | All-Purpose Flour | | 1/3
| cup | Potato flour | | | LEMON TOPPING | | 3
| | Lemons, peel finely grated | | 1
| cup | Sugar | | 3
| | Eggs | | 1/2
| cup | All-Purpose flour, sifted | | 3/4
| tsp | Baking powder | | 3
| tbsp | Lemon juice, strained | | | TO FINISH | | | Powdered sugar for sprinking |

Procedures:
| 1 | To make base, beat butter and powdered sugar together in a large bowl until creamy. | | 2 | Sift all-purpose flour and potato flour into bowl; mix into butter to form a soft dough. | | 3 | Spread evenly in base of an ungreased 13" x 9" baking pan. | | 4 | Cover surface with plastic wrap; rub with the back of a spoon to smooth. | | 5 | Remove plastic wrap; prick well. | | 6 | Chill 30 minutes. | | 7 | Meanwhile, preheat oven to 350 degrees (175 c). | | 8 | Bake about 15 minutes or until lightly browned. | | 9 | Remove from oven and set aside. | | 10 | To make topping, put lemon peel, sugar and eggs in a medium-size bowl. | | 11 | Beat together until smooth and creamy. | | 12 | Sift flour and baking powder into bowl; fold into egg mixture. | | 13 | Stir in lemon juice. | | 14 | Pour lemon topping over base; return to oven 25 minutes or until very lightly browned. | | 15 | Cool in pan. | | 16 | When cool, cut in 30 bars. | | 17 | Sprinkle powdered sugar evenly over top. |
