Ingredients:
1 1/2 cupFlour, all-purpose
1 tspBaking powder
1/2 tspSalt
1/2 cupSugar
1/4 cupBrown sugar, firmly packed
1 tbspInstant coffee
3/4 cupButter, softened
1 Egg
1 1/2 cupFlaked coconut
Procedures:
1Pre-heat oven to 350 degrees.
2In large bowl combine all ingredients except coconut.
3Blend well with mixer.
4Stir in coconut; mix thoroughly.
5Drop by rounded teaspoon onto ungreased cookie sheets.
6Bake at 350 °F for 10 to 12 minutes.
7Cool.
8Makes 36 to 42 cookies.
