| 1 | Directions: for the cookie dough: cream butter, add cheese (at room temperature), and cream until well blended stir in flour, mix well, and chill. |
| 2 | To prepare filling, combine remaining ingredients, and simmer gently, stirring. |
| 3 | Cook intil consistency of marmalade, approximately 15 mins. |
| 4 | Set aside to cool. |
| 5 | Roll dough 1/8" thick on lightly floured board. |
| 6 | Cut in 2" circles. |
| 7 | Put one half of the circles 1" apart on lightly greased baking sheet. |
| 8 | Place 1 tsp. filling in center of each cookie. |
| 9 | Top each with another circle of dough. |
| 10 | Press edges with fork to seal. |
| 11 | Prick cooki tops in several places. |
| 12 | Bake at 350 °F for 15 mins. |
| 13 | Or until lightly browned. |
| 14 | Remove to racks to cool. |
