Ingredients:
1/2 lbsDried figs
1 cupWater plus
3 tbspWater
1/2 cupHoney
2 tspLemon juice
1 cupButter
2 cupCheddar, grated
2 cupSifted a/p flour
Procedures:
1Directions: for the cookie dough: cream butter, add cheese (at room temperature), and cream until well blended stir in flour, mix well, and chill.
2To prepare filling, combine remaining ingredients, and simmer gently, stirring.
3Cook intil consistency of marmalade, approximately 15 mins.
4Set aside to cool.
5Roll dough 1/8" thick on lightly floured board.
6Cut in 2" circles.
7Put one half of the circles 1" apart on lightly greased baking sheet.
8Place 1 tsp. filling in center of each cookie.
9Top each with another circle of dough.
10Press edges with fork to seal.
11Prick cooki tops in several places.
12Bake at 350 °F for 15 mins.
13Or until lightly browned.
14Remove to racks to cool.
