Ingredients:

1/4 cupRaisins
1 cupWater
1/4 cupHoney
CRUST
2 cupQuick-cooking oats
1 cupUnbleached white flour, or
-whole-wheat pastry flour
1 tspBaking powder
1 tspGround cinnamon
1/2 tspGround ginger
1/8 tspGround nutmeg
1/4 tspSalt, optional
1/2 cupHoney
1/4 cupSafflower oil
1/4 cupApplesauce
1 tspVanilla extract

Procedures:
1Preheat overn to 350°F.
2Lightly oil a 9-inch square baking pan.
3Filling: in a saucepan over medium heat, combine dates, raisins, and water; simmer 10 minutes, or until fruit is very soft.
4Drain fruit (save poaching liquid).
5In a blender or food processor, puree fruit and honey, adding reserved liquid as needed to achieve a spreadable consistency.
6Set aside.
7Crust: in a large bowl, combine oats, flour, baking powder, cinnamon, ginger, nutmeg and salt if desired.
8In another bowl, combine honey, oil, applesauce and vanilla, then add to dry ingredients.
9Stir until well blended.
10Divide dough into two parts.
11Press half of dough into prepared baking pan to form a crust.
12With a spatula, spread fruit filling over crust, making sure to spread to corners of the pan.
13Sprinkle remaining dough over the filling, again making sure to get to the corners of the pan.
14Gently pat the topping smooth.
15Bake 25 to 30 minutes, or until golden brown.
16Cool completely, then cut into 1 ?by 3-inch bars.
17Makes 18 bars.
18Helpful hint: store bars in a tightly lidded container to keep them from getting soggy.
19They also freeze well.
