Ingredients:
2 1/2 lbsBoneless pork loin
3 tbspSafflower oil
2 1/2 cupCored, seeded green peppers
Cut into 1-in. cubes
1 tbspGarlic, minced
3 cupDrained, canned mexican
Green tomatoes, or use
Peeled, seeded and chopped
Ripe tomatoes
6 ozCan chopped green chilies
2 tbspCumin
1/4 tspGround cloves
2 tbspFresh chopped coriander
1 cupDry white wine
Procedures:
1Cut the meat into 1 ?in.
2Cubes Heat the oil in a pressure cooker.
3When it is quite hot, add about 1/3 of the meat cubes.
4Cook, stirring, until nicely browned.
5Using a slotted spoon, transfer the cubes to a platter.
6Add another third of the meat cubes and brown them.
7Transfer them to the platter.
8Brown the remaining meat cubes and transfer them to the platter.
9Add the green peppers to the fat remaining in the cooker and cook until wilted.
10Add the garlic and cook about 5 sec., stirring.
11Return the meat cubes to the cooker.
12Add the remaining ingredients and mix well.
13Cover with the lid and add the pressure regulator.
14Cook 20 min. Remove the lid according to the manufacturer"s instructions.
15Cook down, uncovered, about 10 min. or until the sauce is reduced slightly.
16Serve with cumin rice
