Ingredients:

| cup | Butter | | 3/4
| cup | Sugar | | 1
| cup | Carrots, mashed cooked | | 2
| cup | Flour, sifted | | 2
| tsp | Baking powder | | 1/2
| tsp | Salt | | 3/4
| cup | Coconut, shredded | | | Orange Butter Icing | | | ORANGE BUTTER ICING | | 2 1/2
| tbsp | Butter, softened | | 1 1/2
| cup | Confectioners sugar, sifted | | 1 1/2
| tbsp | Orange juice | | 2
| tsp | Orange rind, grated |

Procedures:
| 1 | Heat oven to 400°F. | | 2 | Mix shortening, butter, sugar, eggs, and carrots. | | 3 | Blend flour, baking powder, and salt into shortening mixture. | | 4 | Mix in coconut. | | 5 | Drop dough by teaspoonfuls about 2" apart on a lightly greased baking sheet. | | 6 | Bake 8 to 10 minutes, or until no imprint remains when touched lightly. | | 7 | Frost cooled cookies with icing. | | 8 | Icing: blend butter and sugar together. | | 9 | Stir in orange juice and orange rind until smooth. | | 10 | -- betty crocker cooky book |
