Ingredients:
1/2 cupShortening
1/2 cupButter
3/4 cupSugar
1 cupCarrots, mashed cooked
2 cupFlour, sifted
2 tspBaking powder
1/2 tspSalt
3/4 cupCoconut, shredded
Orange Butter Icing
ORANGE BUTTER ICING
2 1/2 tbspButter, softened
1 1/2 cupConfectioners sugar, sifted
1 1/2 tbspOrange juice
2 tspOrange rind, grated
Procedures:
1Heat oven to 400°F.
2Mix shortening, butter, sugar, eggs, and carrots.
3Blend flour, baking powder, and salt into shortening mixture.
4Mix in coconut.
5Drop dough by teaspoonfuls about 2" apart on a lightly greased baking sheet.
6Bake 8 to 10 minutes, or until no imprint remains when touched lightly.
7Frost cooled cookies with icing.
8Icing: blend butter and sugar together.
9Stir in orange juice and orange rind until smooth.
