Ingredients:
1 1/4 cupDried apples, coarsely
-chopped
1/2 cupApple juice
1 tbspLemon juice
1 1/3 cupFlour
3/4 cupSugar
1 tbspLight brown sugar
1/2 tspSalt
1/2 tspCinnamon
1/4 tspBaking soda
5 tbspButter
3 tbspEgg, well beaten
(about 1 extra-large egg)
1 tspVanilla extract
1 cupWalnuts, chopped
2 tbspGolden raisins
Icing
5 tbspPowdered sugar
1 tbspWhipping cream, chilled
-unwhipped
1/4 tspLemon juice
Procedures:
1Recipe by: mimi markofsky preparation time: 1:00 in a medium skillet, over a low heat, combine apples, apple juice and lemon juice.
2Cook for 5 minutes, stirring twice.
3Increase to high and boil for 10 minutes (if apples start burn, reduce heat to simmer).
4Cover and remove from heat.
5Cool completely.
6Preheat oven to 350 degrees.
7Line a 12-? pizza pan with foil, leaving an overhang all around the edges.
8Grease and flour the foil.
9Set aside.
10Combine the sugars, flour, salt, cinnamon and butter until it is the texture of coarse oatmeal.
11Stir in egg and vanilla until they are just blended.
12Add apple mixture, walnuts and raisins.
13Mix until everything is well combined.
14Turn mixture into prepared pan.
15Cover with plastic wrap and press dough to within ? of the edge of the pan.
16Peel off plastic and bake until brown, about 30 minutes.
17Remove from oven and slide the cookie and foil out of the pan and onto a wire rack.
18Cool for 30 minutes.
19Slide a large knife or metal spatula between the cookie and the foil to separate.
20Pull out the foil and cool the cookie completely.
21Combine all of the ingredients for the icing in a small bowl.
22Drizzle over the top of the cookie in long lines.
23Let icing set, then cut into wedges and serve.
