Shiitake mushroom, sweet potato & hazelnut sa

Ingredients:
2 cupOnions, diced
2 tbspOlive oil
1/4 tspSalt
3/4 tspRosemary, fresh & minced
2 cupSweet potatoes, diced
1 1/2 cupVegetable stock
2 tbspWater
1 cupRice milk -=OR=-
-- soy milk
2 tbspHazelnut butter
1 1/2 cupShiitake mushrooms, sliced
1 1/2 tbspTamari
1 pinchBlack pepper
Procedures:
1Saute onions in oil until lightly browned.
2In a large pot, combine half of the onions with the salt, ?ts rosemary, sweet potatoes & 1 ?c stock.
3Cook until potatoes are tender.
4Cool to room temperature & blend with milk & hazelnut butter until very smooth.
5Set aside.
6Combine remaining onions, mushrooms, tamari, pepper, remaining rosemary & 2 tb water.
7Cook for 5 minutes.
8Add to sweet potato mixture & simmer for 5 minutes.
9Serve hot over fresh pasta.
10Note only use fresh shiitake mushrooms.
