Ingredients:
1 1/2 cupSeedless raisins
3 cupScalded milk
1 1/2 cupCold milk
1 cupCorn meal
1/2 cupMolasses
1 tspSalt
1/2 cupSugar
3/4 tspGinger
1/4 tspNutmeg
1/4 cupButter
Procedures:
1Add the raisins to the hot milk.
2Mix 1 cup cold milk with the corn meal, then stir into the hot milk.
3Heat very slowly, stirring constantly, for about 15 minutes, or until mixture thickens.
4Mix in the molasses, salt, sugar, ginger, nutmeg and butter.
5Pour into buttered 2-quart casserole, and then pour the remaining ?cup cold milk into the center of the pudding.
6Set dish in pan of cold water, and bake in a slow oven, 300°F, for 2 ?hours.
7Let cool for 3-4 hours before serving.
