Ingredients:
1 packSpinach, washed (10 oz)
1 medOnion, sliced
3 tbspOil
Salt
Procedures:
1Wash spinach and slice onion.
2Place oil in wok, heat to smoking point.
3Add onion to wok, stir.
4Add spinach, stir spinach from bottom to top of wok.
5Cover wok briefly.
6Lift cover up and keep stirring spinach until it is wilted.
7Cook the spinach a full five minutes, covering and uncovering the wok as you are stir frying.
8note: other leafy green vegetables may be similarly cooked, such as lettuce, bok choy, celery cabbage, and rupini.
