Ingredients:
WALDINE VAN GEFFEN
1/4 cupOil
3/4 cupSugar
1 Egg
1 tspVanilla
1/4 tspSalt
1/4 tspCinnamon -- optional
1 tspBaking soda
2/3 cupMilk
2 tbspLemon juice
1/3 cupUnsweetened cocoa powder
1 cupAll-purpose flour
Procedures:
1Beat oil and sugar with egg with an electric mixer until smooth.
2Beat in vanilla, salt, and baking soda until well blended.
3Put milk and lemon juice together in cup until curdled and pour into batter, beating to blend well.
4Beat in cocoa powder and finally the flour, beating 3 minutes after last addition, scraping down sides and bottom of bowl often.
5Divide batter equally between 12 paper-lined cupcake wells.
6Bake ata 350°F for 25 minutes or until a toothpick inserted comes out clean.
7Cool in pan on rack 20 minutese.
8Remove to platter to continue cooling.
9Frost as desired.
