Russion jewish cabbage rolls

Ingredients:
1 Large head of cabbage
1 Large onion, chopped
6 Small carrots
3 Stalks celery
1/4 tspSalt
1 1/2 cupTomato juice
1 lbsHamburger
2 Slices bread
1 Egg
1/4 cupWater
2 canTomatoes
1 cupSugar
2 Lemons
Dash pepper
Procedures:
1Core cabbage and place in large saucepan.
2Cover cabbage with water and boil until cabbage is softened.
3Drain off water.
4Set aside copped onion, pared carrots, and cut celery stalks in halves.
5In a small bowl, dampen bread with water.
6Add hamburger, egg, salt and pepper.
7Mix together well.
8Slice thick stem base off cabbage leaves.
9Place some meat misture on leaf.
10Fold and roll, place seam side down in saucepan.
11On top of cabbage rolls, place onions, carrots, and celery.
12Pour tomatoes and tomato juice over all.
13Carmelize 1 cup sugar in heavy skillet.
14Add to cabbage roll mixture.
15Juice 2 lemons and add as final ingredient.
16Simmer 2 hours uncovered.
17This recipe says sauce pan but i used a 13" cake pan.
18It doesn"t specify degrees, so i picked 350.
19??? the cake pan holds the rolls and then the carrots and celery can be decorative by laying them horizontally, alternating.
20It makes a pretty dish.
21And it is good.
22Well worth the effort.
