Rolled beef slices

Ingredients:
1 1/2 lbsBeef flank steak
3/4 cupDry red wine
1 tspSalt
1 tspDried basil leaves
1 tspDried oregano leaves
2 clGarlic, crushed
1 lbsBulk pork sausage
1 smallOnion, chopped (about ?/td>
Cup)
1/4 cupDry bread crumbs
1/2 tspSalt
1 can(4 oz) chopped green chilies
(drained)
1 medCarrot
3 Hard cooked eggs
2 tbspOlive oil
1 cupWater
1 Jar (12 ounces) salsa
Procedures:
1Split beef steak lengthwise almost into halves; open and place in shallow glass or plastic dish.
2Mix wine, 1 teaspoon salt, the basil, oregano and garlic; pour over beef.
3Cover and refrigerate at least 1 hour.
4Drain: reserve marinade.
5cook and stir sausage and onion in 4 quart dutch oven over medium heat until sausage is done; drain.
6Stir in bread crumbs, ?teaspoon salt and the chilies.
7Spread sausage mixture on cut side of open beef to within 1 inch of edge.
8Cut carrot lengthwise into halves; cut each half lengthwise into 3 strips.
9Arrange carrot crosswise on sausage mixture.
10Place peeled eggs in a row along one narrow edge.
11Rollup, beginning at end with eggs; tie with string or secure with wooden picks.
12cook beef roll in oil in same dutch oven over medium heat, turning carefully, until brown on all sides; drain.
13Add reserved marinade and water.
14Heat to boiling; reduce heat.
15Cover and simmer until beef is tender, about 1 hour.
16Remove beef from liquid.
17Cover and refrigerate until cold, at least 6 hours but no longer than 24 hours.
18prior to serving spread salsa on serving platter or plate.
19Cut beef roll into slices; arrange on salsa.
20Serve with additional salsa if desired.
