Roasted and marinated bell peppers

Ingredients:
6 tbspOlive oil -- plus more for
Grill
3 Whole yellow bell peppers
3 Whole red bell peppers
2 largeGarlic cloves -- minced
2 tbspRed wine vinegar
1 1/4 tspFresh thyme -- finely
Chopped
1/2 tspSalt
1/8 tspFreshly ground pepper
Procedures:
1Brush grill with oil; heat to medium to hot.
2Grill peppers until blackened, 8 to 12 minutes.
3Let peppers cool in a paper bag.
4Peel and seed, saving juices.
5Cut into 1-inch strips.
6In a bowl, combine garlic, vinegar, thyme, salt, pepper and any pepper juices.
7Gradually whisk in oil.
8Toss peppers with vinaigrette and arrange on a platter to serve.
