Rice with spinach, herbs and cheese

Ingredients:
1 cupWhite or brown rice
Salt and pepper, to taste
1 lbsFresh spinach
1 tbspOlive oil
1 Onion, minced
1 Garlic clove, minced
1 tspChopped thyme
1/4 cupMinced parsley
1 pinchRed pepper flakes
1/4 lbsGrated provolone cheese
3 Eggs, beaten (optional)
Procedures:
1Preheat oven to 350°F.
2Cook rice in salted water until tender but still undercooked (15 minutes for white rice, 30 minutes for brown).
3Drain, rinse with cold water, drain again and set aside.
4Wash spinach and remove stems.
5Cook spinach in the water that clings to the leaves, until wilted.
6Cool and chop coarsely.
7Heat the oil, add the onion and saute until softened.
8Add the garlic and thyme.
9Combine all the ingredients together and season with salt and pepper to taste.
10Lightly oil a baking dish and add the spinach mixture.
11Drizzle more oil over the top, if desired.
12Cover with foil and bake for 25 minutes.
13Remove foil and cook for 5 minutes more.
