Ingredients:
2 tspOlive oil
Water
3 cupThinly sliced red onions
2 tspRed wine vinegar
1 tspJulienned orange zest
1 cupThinly sliced zucchini
4 ea (1-ounce) pita breads
1 tbspPlus 1 teaspoon chopped
-cilantro
Procedures:
1Heat 1 teaspoon oil and ?cup water in large nonstick skillet; add onion.
2Cook over low heat, covered, 30 minutes.
3Stir in vinegar and orange zest; cook, uncovered, 10 minutes, or until all liquid is absorbed.
4preheat oven to 400°F.
5Coat baking sheet with vegetable oil spray.
6In a small bowl, combine zucchini, 1 tb water and remaining 1 ts oil; toss to coat.
7arrange pitas on prepared baking sheet; top each with one-fourth of the zucchini slices; bake 8 minutes.
8Spoon one-fourth cooked onion on each pita; bake 6 minutes.
9Sprinkle each pita with one-fourth of the cilantro.
10Bake 2 minutes.
