Ingredients:
1 tspCanola oil
2 Onions, chopped
1 Stalk celery, chopped
1/2 tspDried oregano
1/4 tspCrushed red chili pepper
2 cupCooked red kidney beans
2 cupHot cooked brown rice
3 Cloves garlic, minced
1 Green sweet pepper, chopped
1 tspDried thyme
1/2 tspSalt
1 cupBeef OR vegetable stock
1/4 lbsLean ham, cubed
Fresh parsley or cilantro
Procedures:
1Heat oil over medium heat in a nonstick skillet.
2Cook garlic, onions, green pepper and celery, stirring often, for about 5 minutes or until onion is translucent.
3stir in seasonings, pour in stock.
4with fork, crush about 1/3 of the beans.
5Add to skillet along with ham, stir well.
6Bring to a boil, reduce heat.
7Simmer, stirring occasionally, for about 20 minutes or until thickened.
8Spoon over rice.
