Carrot pudding

Ingredients:
2 lbsCarrots, peeled and coarsely
-grated
1/3 cupButter
1/2 Juice of lemon
Salt
1 tbspSugar
Water
1 1/2 cupHeavy whipping cream
3 Eggs
Freshly ground pepper
Procedures:
1From richard olney"s "simple cooking."
2combine carrots, butter, lemon juice, salt to taste and sugar in large saucepan.
3Add just enough water to cover.
4Bring to boil and simmer, covered, about ?hour.
5Then, over high heat, cook until liquid evaporates, stirring constantly with wooden spoon.
6Let cool 10 minutes.
7whisk together cream, eggs and salt and pepper to taste in separate bowl.
8Stir mixture into carrots.
9Pour into buttered baking dish and bake until surface is browned, about 35 minutes.
10makes 4-6 servings.
