Ingredients:

| lbs | Carrots, peeled and coarsely | | | -grated | | 1/3
| cup | Butter | | 1/2
| | Juice of lemon | | | Salt | | 1
| tbsp | Sugar | | | Water | | 1 1/2
| cup | Heavy whipping cream | | 3
| | Eggs | | | Freshly ground pepper |

Procedures:
| 1 | From richard olney"s "simple cooking." | | 2 | combine carrots, butter, lemon juice, salt to taste and sugar in large saucepan. | | 3 | Add just enough water to cover. | | 4 | Bring to boil and simmer, covered, about ?hour. | | 5 | Then, over high heat, cook until liquid evaporates, stirring constantly with wooden spoon. | | 6 | Let cool 10 minutes. | | 7 | whisk together cream, eggs and salt and pepper to taste in separate bowl. | | 8 | Stir mixture into carrots. | | 9 | Pour into buttered baking dish and bake until surface is browned, about 35 minutes. | | 10 | makes 4-6 servings. |
