Ingredients:
10 Plantains
1 cupButter
3/4 cupBrown sugar, light
1/2 cupRum, dark
Procedures:
1Peel and quarter plantains.
2Place cut sides up in a buttered shallow baking dish.
3Dot with pieces of butter; sprinkle with brown sugar and rum.
4Cover and bake in preheated 350°F.
5Oven 30 minutes.
6Remove cover, increase temperature to 400°F.
7And bake 15 minutes longer.
8If using bananas, cake in an uncovered shallow baking dish at 350°F.
9For 20 minutes.
10note: green-tipped (underripe) bananas may be substituted; bake at 375°F.
11For 30 minutes.
