Ingredients:
1 lbsPinto beans
4 medTomatoes, peeled and diced
1/4 cupBell pepper, green, chopped
2 tspSalt
1/4 tspRosemary
1/4 cupRomano, grated
6 cupWater
1 Onion, chopped
1 Garlic clove, crushed
1/2 tspOregano
1 cupMozzarella, shredded
Procedures:
1Soak beans in water overnight.
2In slow cooker, cook beans in water on high for 2-3 hours, until tender but not mushy.
3Drain, saving liquid.
4Add tomatoes, onion, green pepper, garlic, salt, oregano, and rosemary.
5Add 2 cups bean liquid.
6Cover and cook on low for 8-10 hours.
7Add cheese and cook on high, uncovered, for 15-20 minutes.
8Turn off heat and let stand a few minutes before serving to let beans absorb some of the juice.
