Peter's cauliflower gratin

Ingredients:
1 Head cauliflower
1 largeEgg
1/4 cupWhipping cream (or more)
1 tbspButter
-for greasing gratin dish
7 tbspButter, broken into dots
1/2 cupGrated cheese
-(Parmesan or Gruyere)
Salt to taste
1/4 tspPepper
1/4 tspNutmeg
Procedures:
1Preheat oven to 400°F.
2In a large pot of boiling, salted water blanch the cauliflower, until crisp-tender, about 5 minutes.
3Drain, refresh in ice cold water and drain again.
4Chop coarsely.
5Whip together the egg and cream and season with salt, pepper and nutmeg.
6Put the chopped cauliflower in the buttered gratin dish and pour the cream mixture over it.
7Sprinkle with grated cheese and dot with butter.
8Bake for 20 minutes until hot and crusty.
