Ingredients:
| | 12 ea Plum tomatoes, skinned & | | | -- coarsely chopped | | | 4 ea Garlic cloves, minced | | 1/2
| cup | Scallions, thinly sliced | | 1
| cup | Green bell pepper, chopped | | 2
| tbsp | Olive oil | | 2
| cup | Mushrooms, sliced | | 1
| cup | Snow peas | | 1
| lbs | Penne | | 1/4
| tsp | Cayenne | | 1
| tbsp | Tamari |

Procedures:
| 1 | In a large pot, saute the garlic, scallions & green bell pepper in oil over medium heat until the peppers are tender-crisp, about 2 minutes. | | 2 | Add the mushrooms, reduce the heat to low & saute for 3 minutes. | | 3 | Add the tomatoes & snow peas. | | 4 | Cover & simmer for 10 minutes. | | 5 | Cook the pasta until *al dente*. | | 6 | Drain. | | 7 | Stir the cayenne & tamari into the tomato sauce & spoon over the hot pasta. | | 8 | Serve immediately. |
