Pear almond clafouti with red wine glaze

Ingredients:
CLAFOUTI
2 cupWhole wheat pastry flour
--or unbleached white flour
1 1/2 cupAlmond meal
2 1/2 tspBaking powder
1/3 cupSoy milk
2/3 cupFruit juice concentrate
1 tspVanilla
1/3 cupApple juice concentrate
2 tspLemon juice
2 ea Firm pears, cored & sliced

GLAZE
2/3 cupRed wine
1/3 cupFruit juice concentrate
3 tbspArrowroot or cornstarch
3 tbspWater
Procedures:
1Clafouti: preheat oven to 375°F.
2Combine flour with 1 c almond meal & baking powder in a bowl.
3Mix soy milk, fruit juice concentrate & vanilla & pour into flour mixture.
4Mix well & pat down into a 9" shallow cake or quiche pan.
5Combine remaining ?c almond meal with 1/3 c apple juice concentrate & lemon juice & spread over dough.
6Arrange pear slices on top in a spiral pattern.
7Bake for 35 minutes.
8glaze: combine wine & concentrate in a small pot & heat to a simmer.
9Dissolve arrowroot or cornstarch in a nequal amount of water & whisk into wine.
10Cook till thickened.
11Brush while hot over pears.
12Serve hot or warm.
