| 1 | Clafouti: preheat oven to 375°F. |
| 2 | Combine flour with 1 c almond meal & baking powder in a bowl. |
| 3 | Mix soy milk, fruit juice concentrate & vanilla & pour into flour mixture. |
| 4 | Mix well & pat down into a 9" shallow cake or quiche pan. |
| 5 | Combine remaining ?c almond meal with 1/3 c apple juice concentrate & lemon juice & spread over dough. |
| 6 | Arrange pear slices on top in a spiral pattern. |
| 7 | Bake for 35 minutes. |
| 8 | glaze: combine wine & concentrate in a small pot & heat to a simmer. |
| 9 | Dissolve arrowroot or cornstarch in a nequal amount of water & whisk into wine. |
| 10 | Cook till thickened. |
| 11 | Brush while hot over pears. |
| 12 | Serve hot or warm. |
