Ingredients:
1 largeSquash, scallop -- sliced
1/4 " thick
8 ozSpaghetti sauce
8 ozCottage cheese, 2% fat
1/2 cupShredded mozzarella cheese
1/2 cupShredded parmesan cheese
Procedures:
1Slice patty pan or scalloped squash ?inch thick.
2Lightly salt to reduce water in squash at least an hour a head of making this dish, then drain.
3Spray 1 ?qt. square baking dish lightly with pam-type spray.
4Layer sliced squash in baking dish.
5Spoon spaghetti sauce on top of the squash.
6Top with cottage cheese, sprinkle of mozzarella & parmesan cheese.
7Repeat 2 more times ending with cheeses.
8Bake at 350f for 1 hour.
