Oven-cured tomatoes

Ingredients:
8 largeTomatoes
Extra virgin olive oil
Salt and pepper
1 tspSugar
2 tspMarjoram -- finely chopped
Procedures:
1Heat oven to 250°F.
2Cut tomatoes crosswise into thirds.
3Place cut side up on parchment-lined baking sheet.
4Brush with oil; season with salt and pepper, sugar and marjoram.
5Place in oven.
6For a gas oven with pilot light, turn off heat for 2 hours; leave overnight.
7For an electric oven, bake 2 hours, then turn to warm, leave overnight.
